Ingredients:

Combine all ingredients into a large bowl.

1 cup of quinoa, cooked and cooled
1 small zucchini, thinly slice and lightly steamed
1 cup each of baby kale and spinach leaves
1/2 avocado sliced
100g snow peas, topped and tailed and chopped in two
2 spring onions chopped

Dressing:

Pop these ingredients into a jar, secure with a lid, shake and pour over the salad when ready to serve. Combine well.

2 tsp dijon mustard
2 tsp honey
2 cloves garlic crushed
